Should I sign before the appointment?

For a jurat or signature-witnessing act, wait to sign until the notary instructs you. For an acknowledgment, you may already have signed, but you must personally acknowledge the signature.

Can you tell me which certificate I need?

A non-attorney notary cannot select a notarial act or provide legal advice. The document preparer or receiving agency should tell you what is required.
